One-Pan Garlic Herb Chicken & Veggies

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups baby potatoes, halved
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
Kid-friendly tip: If broccoli is a tough sell, cut it into smaller florets and keep seasoning mild. You can also swap broccoli for green beans or asparagus.

Instructions

  1. Heat the oven: Preheat to 400°F (200°C). Line a sheet pan with parchment for easiest cleanup.
  2. Arrange: Place chicken breasts, halved baby potatoes, and broccoli on the sheet pan in an even layer.
  3. Season: Drizzle with olive oil. Sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss potatoes/broccoli to coat; rub chicken lightly with seasoning.
  4. Roast: Bake 25–30 minutes, or until chicken reaches 165°F in the thickest part and potatoes are tender.
  5. Serve: Rest chicken 5 minutes, then serve hot with the roasted veggies.

If your sheet pan is crowded, use two pans so everything roasts (not steams).

1) Cut potatoes evenly

Try to keep potato halves similar in size so they finish at the same time.

2) Don’t overcook the broccoli

For crisp-tender broccoli, you can add it for the last 12–15 minutes if your florets are small. If you like it softer, roast the full time.
