One-Pan Garlic Herb Chicken & Veggies
A simple sheet pan dinner with juicy chicken breasts, baby potatoes, and broccoli roasted with garlic and Italian herbs. Everything cooks together at 400°F for easy cleanup and a weeknight-friendly meal.
Note: Prep/total times are typical estimates based on the method (sheet pan roast at 400°F).
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups baby potatoes, halved
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
- Heat the oven: Preheat to 400°F (200°C). Line a sheet pan with parchment for easiest cleanup.
- Arrange: Place chicken breasts, halved baby potatoes, and broccoli on the sheet pan in an even layer.
- Season: Drizzle with olive oil. Sprinkle with garlic powder, Italian seasoning, salt, and pepper. Toss potatoes/broccoli to coat; rub chicken lightly with seasoning.
- Roast: Bake 25–30 minutes, or until chicken reaches 165°F in the thickest part and potatoes are tender.
- Serve: Rest chicken 5 minutes, then serve hot with the roasted veggies.
If your sheet pan is crowded, use two pans so everything roasts (not steams).
How to make this sheet pan dinner turn out great
1) Cut potatoes evenly
Try to keep potato halves similar in size so they finish at the same time.
2) Don’t overcook the broccoli
For crisp-tender broccoli, you can add it for the last 12–15 minutes if your florets are small. If you like it softer, roast the full time.
3) Use a thermometer
Chicken breasts stay juicy when you pull them right at 165°F.
Variations
- Swap the veggie: Green beans or asparagus work great instead of broccoli.
- Add more color: Toss in sliced bell peppers or red onion (they roast well at 400°F).
- More garlicky: Add 2–3 minced garlic cloves with the oil.
- Meal prep: Roast extra potatoes/veg on a second pan and save for lunches.
Storage and reheating
- Refrigerate: Store leftovers in an airtight container for up to 4 days.
- Reheat: Warm in the microwave in 60–90 second bursts, or in a 350°F oven until hot.
- Freezing: Chicken freezes well, but roasted broccoli can soften after thawing. If freezing, consider swapping in green beans.
FAQs
Can I use chicken thighs?
Yes. Boneless thighs roast well at 400°F and stay juicy. Start checking temperature at ~20 minutes and cook to 165°F.
My potatoes are still firm—what happened?
They’re likely too large or crowded on the pan. Cut smaller and spread out. If needed, roast the potatoes for 10 minutes before adding chicken.
What’s the best side with this?
This is already a complete meal, but it’s great with a simple side salad, fruit, or a slice of whole-grain bread.
